High Tunnel Magic

Ever wonder how we grow spinach and arugula and other green treats in the middle of winter? Or when winter returns, un-invited,  for a long weekend visit on April? First - we have high tunnels and the smaller tunnels we call caterpillar tunnels (cause that is what they look like) to keep the soil and plants warm and cozy on cold days. We also have farmers like Leilani here who work tirelessly to cover and uncover the plants each day with an additional layer of frost protection so they can grow all day and stay warm at night. Thanks to her hard work we will be harvesting spinach, arugula and tatsoi this week!

We will also have the very last of our winter storage carrots, garlic, potatoes and onions as well as Long Wind tomatoes. As always, we have a full selection of our pastured meats, eggs, local milk, yogurt and cheeses plus goodies galore from Marilyn's Kitchen. Jonathan's bread is back in stock every Saturday morning!

FARM TO TAKE OUT this week includes Udon Noodles with Miso Sesame Pork Tenderloin and Spanakopita.

This Friday is a Burrito Night! Stop by the Cookeville Market between 5 and 6 and have us build a burrito or a plate of loaded nachos to your exact and delicious specifications.
