WInter season is in full swing and with all the cold damp weather we are trying to beat the blues by cooking and eating good food. We have found it tastes even better after planting garlic in the snow!
This week's CSA includes:
Red and Yellow Onions
Acorn or Butternut Squash
Red Norlander Potatoes
Toko Bekana (Chinese loose-leaf cabbage)
What to do with it all?
Roast the baby beets whole with cubes of the squash. The beet greens didn't survive the super cold temps of last week but the beets are now super sweet!
Make a pasta with Broccoli Raab and carmalized onions. If you haven't cook with Raab before you eat the florets and the leaves and stems. It is not as sweet as broccoli and pairs well with LOTS of garlic.
You can do two salads this week - one with the baby greens and one with the Toko Bekana - you can toss it with an asian style dressing and use the red onions as well!
