Bright Color for Grey Days

What a cold, snowy week it has been! We planted garlic in the snow this week and learned to love our long underwear again after a long hot summer! The cold weather makes the taste of our winter crops really pop - the kale and carrots are sweeter and the radish and arugula have an extra zing !
This week's CSA celebrates cold weather and the bright colors and vibrant flavors of winter eating with:
Arugula
Kale
Bok Choy
Radish
Leeks
Carrots
Yukon Gold Potatoes
What to make with all this?
Leek and Potato Soup
Arugula or Kale Salad with Radish and Carrots
A Stew with Leeks, Carrots, Potatoes and Kale
A Stir Fry with Leeks, Bok Choy, Carrots and Radish (toss them in last to save some of the red and pink beauty!)
