We have run the winter CSA for a number of years now and this year we are reminded that winter farming means that you need to be prepared for everything. ...sub zero weather, high winds and deep, deep snow are a sharp contrast to the balmy November we had two years ago. Despite it all, we will be picking and delivering a CSA this week - call us crazy but it still tastes good!

What to do with it all?
It's cold out - turn your oven on and roast stuff!
Roast the Acorn Squash with the Brussel Sprouts.....
Toss the Russets in salt and olive oil and roast those too
The Beet Greens would make a great pasta or risotto --- and who can't feel warmer with a pink dinner?
And the carrots? Eat them on the way home from picking up your share and think about next summer......
